Recipe: Pineapple Coconut Water

Anyone who's never had fresh pineapple juice is missing out on one of life's simple pleasures. I juiced my small pineapple, enjoyed the first glass neat, and used the rest to make this thirst quencher—made with coconut water, lime, and pure ginger juice. It's invigorating, fragrant, hydrating, and has a pure, intense yellow hue that lets us sense its power and vitality before we even pick up a glass. Enjoy!

Ingredients

  • 200 ml fresh pineapple juice
  • 200 ml Thai Coco organic coconut water
  • 1 teaspoon pure ginger juice
  • 1 half organic lime (juice and zest)

Optional: 1 teaspoon of liquid honey, if required


preparation

Combine pineapple juice, coconut water, and ginger juice in a cocktail shaker or mason jar with ice. Shake well, season to taste, and add a little honey for sweetness if desired. If the pineapple is sweet enough, you won't need much honey.

Fill small, chilled glasses with plenty of ice cubes and thin lime slices. Pour the pineapple coconut water into the prepared glasses and finish with a squeeze of lime, if desired.
